Cooking Pasta

Boil the Water
Fill a large pot with water, add a generous amount of salt, and bring to a rolling boil.

Cook the Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining, reserve about 1 cup of the pasta cooking water. Then drain the spaghetti and set aside.
Making the Sauce

Cook the Pancetta
In a large skillet over medium heat, add the pancetta. Cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
Combining Ingredients

Mix Pasta and Pancetta
Add the drained spaghetti to the skillet with the pancetta. Toss to combine, allowing the residual heat to warm the spaghetti.

Taste and adjust seasoning with salt and additional black pepper if desired.
Serving

Serve immediately, garnished with freshly chopped parsley and extra Parmesan cheese if desired.
