    Sear the Short Ribs

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the short ribs with salt and black pepper, then add them to the pot. Sear on all sides until browned, about 8 minutes total. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, carrots, celery, and garlic. Sauté for about 5 minutes until the vegetables are softened.

    Deglaze and Simmer

    Pour in the red wine, scraping up any browned bits from the bottom of the pot. Bring to a boil, then add the beef broth and thyme. Return the short ribs to the pot, cover, and reduce heat to low. Simmer for 2.5 to 3 hours, until the meat is tender and falls off the bone.

Potato Gnocchi

    Prepare the Potatoes

    In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 15-20 minutes. Drain and let them cool slightly.

    Make the Dough

    Pass the cooked potatoes through a ricer or mash them until smooth. In a large bowl, combine the potato puree, flour, beaten egg, and salt. Mix until a dough forms. Do not overwork the dough.

    Shape the Gnocchi

    Divide the dough into four pieces. Roll each piece into a long rope about 1/2 inch thick. Cut into 1-inch pieces and use a fork to create ridges on each piece.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook until they float to the top, about 2-3 minutes. Remove with a slotted spoon and set aside.

Assembly

    Combine and Serve

    Once the short ribs are done, remove them from the pot and shred the meat. Strain the sauce if desired, then return the shredded meat to the pot. Add the cooked gnocchi and fresh diced tomatoes, tossing gently to combine. Serve topped with shaved Parmesan and chopped basil.
