Preparation

    Prepare the Brussels Sprouts

    Trim the ends of the Brussels sprouts and remove any damaged outer leaves. Using a sharp knife or a mandoline, slice the Brussels sprouts thinly and place them in a large bowl.

    Prepare the Butternut Squash

    Peel and seed the butternut squash, then cut it into small cubes. Place the cubes in a separate bowl.

    Prepare the Carrots

    Peel the carrots and slice them into thin rounds. Add them to the bowl with the Brussels sprouts.

    Prepare the Beets

    Cook the beet until tender, either by boiling or roasting. Once cooled, peel and slice thinly. Add the slices to the bowl with the other vegetables.

Assembly

    Combine Ingredients

    In the bowl with the Brussels sprouts, carrots, and beets, add the cubed butternut squash and dried cranberries. Toss gently to combine all the ingredients evenly.

    Add Cheese and Dressing

    Sprinkle the shaved Parmesan cheese over the salad mixture. Drizzle the Champagne vinaigrette on top, and toss again until everything is well coated.

Serving

    Serve the Salad

    Transfer the shaved Brussels sprouts salad to a serving platter or individual bowls. Optionally, garnish with additional shaved Parmesan and a sprinkle of salt and pepper. Serve immediately.
