Preparing the Ingredients

Clean the Octopus
Rinse the octopus under cold water, making sure to remove any debris. If necessary, you can remove the beak and eyes.

Cooking the Octopus

Boil the Octopus
In a large pot, bring salted water to a boil. Add the octopus and cook for about 45 minutes or until tender. Remove from water and let cool slightly before slicing into bite-sized pieces.

Sauté the Octopus
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the sliced octopus and sauté for about 5-7 minutes until slightly crispy and golden. Season with salt, black pepper, and paprika.

Making Chipotle Aioli

Prepare the Aioli
In a small bowl, combine the mayonnaise, chipotle peppers (finely chopped), minced garlic, and lime juice. Mix well and season with salt to taste.

On a serving plate, arrange the sautéed octopus, potatoes, and brussel sprouts. Serve with a generous dollop of chipotle aioli on the side.
