Roasting the Beets

Preheat your oven to 400°F (200°C). Wash and scrub the beet roots thoroughly to remove any dirt. Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast in the oven for about 45-60 minutes or until fork-tender. Remove from the oven and allow to cool.

Peeling the Beets

Once the beets are cool enough to handle, unwrap them from the foil. Use your hands (wear gloves to avoid staining) or a paper towel to rub the skins off. Cut the beets into wedges or slices.

In a large bowl, add the arugula. Top with the roasted beet slices. Crumble the goat cheese over the salad.
