Preparation of Beets
Roasting the Beets
Preheat your oven to 400°F (200°C). Wash and scrub the beet roots thoroughly to remove any dirt. Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast in the oven for about 45-60 minutes or until fork-tender. Remove from the oven and allow to cool.
Preparing the Salad
Assembling the Salad
In a large bowl, add the arugula. Top with the roasted beet slices. Crumble the goat cheese over the salad.
Making the Dressing
Mixing the Citrus Vinaigrette
In a small bowl, whisk together the olive oil, fresh lemon juice, honey, salt, and black pepper until well combined. Adjust seasoning to taste.
Serving
Final Touches
Drizzle the citrus vinaigrette over the salad just before serving. Toss gently to combine, and serve immediately.
