Cooking the Pasta

    Boil the Water

    In a large pot, bring 4 liters of salted water to a boil.

    Cook the Pasta

    Add the penne pasta to the boiling water and cook according to package instructions, usually about 10-12 minutes, until al dente.

    Drain the Pasta

    Once cooked, drain the pasta in a colander and set aside, reserving a cup of pasta water.

Making the Sauce

    Heat the Olive Oil

    In a large skillet, heat 3 tablespoons of olive oil over medium heat.

    Add Garlic

    Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasonings

    Stir in the canned diced tomatoes, Kalamata olives, capers, red chili flakes, and black pepper. Let the mixture simmer for about 10 minutes, stirring occasionally.

    Combine Pasta and Sauce

    Add the drained penne pasta to the skillet with the sauce. Toss to combine, adding a little reserved pasta water if the mixture seems dry.

    Garnish and Serve

    Remove from heat and stir in the chopped fresh parsley. Serve hot with additional parsley on top if desired.
