Preparation of Beans

Soak the Beans
Rinse the dried cannellini beans under cold water. Place them in a large bowl, cover with water, and let them soak overnight or for at least 8 hours.

Cook the Beans
Drain and rinse the soaked beans. In a large pot, cover the beans with fresh water and bring to a boil. Reduce heat and simmer until the beans are tender, about 1 to 1.5 hours. Drain and set aside.

Add Broth and Tomatoes
Pour in the vegetable broth and add the canned diced tomatoes, bay leaves, and thyme. Stir to combine and bring to a simmer.

Add Beans and Pasta
Add the cooked cannellini beans and pasta to the pot. Season with salt and black pepper to taste. Simmer for about 10-12 minutes, until the pasta is al dente.

Serve the Soup
Remove the bay leaves. Stir in the chopped parsley and adjust seasoning if necessary. Serve hot, garnished with grated Parmesan cheese if desired.
