Method

Mussels Preparation

  1. 1

    Clean the Mussels

Rinse the mussels under cold water to remove any dirt or sand. Scrub the shells with a brush and remove the beards if necessary.

  2. 2

    Sauté Aromatics

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add minced garlic (4 cloves) and diced shallots (2 medium) and sauté until fragrant and translucent, about 3-4 minutes.

  3. 3

    Add Wine and Mussels

Pour in 1 cup of white wine and add the cleaned mussels. Sprinkle in 1 teaspoon of crushed red pepper flakes and 1 teaspoon of salt.

  4. 4

    Cook the Mussels

Cover the pot and increase the heat to high. Cook for about 5-7 minutes or until the mussels have opened up. Discard any mussels that remain closed.

  5. 5

    Garnish and Serve

Sprinkle with 1 tablespoon of chopped fresh parsley and serve with lemon wedges on the side.

Crostini Preparation

  1. 6

    Prepare the Baguette

Slice the baguette into 1/2 inch thick slices.

  2. 7

    Toast the Baguette

Brush both sides of the slices with olive oil (2 tablespoons) and place them on a baking sheet. Toast in the oven at 400°F (200°C) for about 5-7 minutes or until golden brown.

  3. 8

    Add Garlic Flavor

Once toasted, rub the warm crostini with 1 clove of cut garlic to impart flavor.
