    Prepare the clams

    Rinse the fresh clams under cold water to remove any sand or debris. Soak them in salted water for about 30 minutes, then rinse again and set aside.

    Prep the ingredients

    Chop the fresh tomatoes into small pieces and mince the garlic cloves. Set aside. Wash and dry the arugula.

Cooking

    Cook the linguini

    In a large pot, bring salted water to a boil. Add the linguini pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Sauté garlic

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

    Add wine and clams

    Pour in the dry white wine and add the rinsed clams to the skillet. Cover the skillet and cook for about 5-7 minutes, or until the clams open. Discard any clams that do not open.

    Combine ingredients

    Once the clams are cooked, add the chopped tomatoes, drained linguini, and arugula to the skillet. Toss everything together, adding reserved pasta water as needed to create a light sauce. Season with salt and black pepper to taste.

Serving

    Serve the linguini vongole hot, garnished with freshly grated Parmesan cheese if desired. Enjoy!
