Preparation of Vegetables

Prepare the Vegetables

Wash and cut the zucchini, bell peppers, and asparagus into bite-sized pieces. Clean the portobello mushrooms and remove the stems.

Marinate the Vegetables

In a large bowl, combine the cut vegetables with olive oil, salt, and black pepper. Toss well to ensure even coating. Let them marinate for about 15 minutes.

Grilling

Preheat the Grill

Preheat your grill to medium-high heat.

Grill the Vegetables

Place the marinated vegetables on the grill and cook for 5-7 minutes, turning occasionally, until they are tender and have grill marks. Add the portobello mushrooms to the grill and cook for an additional 5 minutes.

Assembly

Prepare the Mayonnaise

In a small bowl, mix the mayonnaise and lemon juice until well combined.

Assemble the Dish

On a serving platter, layer the grilled vegetables over a bed of lettuce. Sprinkle the grilled portobello mushrooms on top and then evenly distribute the fontina cheese over the vegetables. Drizzle the prepared mayonnaise over the top.
