For the Gnocchi

    Prepare the Gnocchi Dough

    In a large bowl, combine ricotta cheese, flour, egg, and salt. Mix until a dough forms.

    Knead the Dough

    Lightly flour a surface and knead the dough for about 2-3 minutes until it is smooth. If it is too sticky, add a little more flour.

    Shape the Gnocchi

    Divide the dough into small pieces and roll each piece into a rope about 1 cm thick. Cut into 2 cm pieces to form the gnocchi.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add gnocchi in batches. They are ready when they float to the surface (about 2-3 minutes). Remove with a slotted spoon and set aside.

For the Ragu

    Sauté the Vegetables

    In a large pan, heat olive oil over medium heat. Add finely chopped onion, carrot, celery, and minced garlic. Sauté for about 5 minutes until softened.

    Brown the Meat

    Add ground beef and veal to the pan. Cook until browned, breaking it up with a spoon, about 8-10 minutes.

    Deglaze with Wine

    Pour in red wine and let it simmer for 2-3 minutes until slightly reduced.

    Add Tomatoes and Seasonings

    Stir in crushed tomatoes, salt, pepper, and oregano. Reduce heat to low and let simmer for about 30 minutes, stirring occasionally.

    Finish with Cream

    Stir in heavy cream and let the sauce simmer for an additional 5 minutes. Adjust seasoning if necessary.

To Assemble

    Combine Gnocchi and Ragu

    Add cooked gnocchi to the ragu sauce, gently mixing to coat the gnocchi.

    Plate the gnocchi bolognese and garnish with fresh basil leaves. Enjoy your delicious homemade dish!
