Spicy Pomodoro Sauce

Preparing the Calamari

Prepare the coating
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper.

Coat the calamari
Dip each calamari ring into the beaten eggs, then dredge in the flour mixture until fully coated. Set aside on a plate.

Heat the oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the calamari
Carefully add the coated calamari rings to the hot oil in batches, frying for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Making the Spicy Pomodoro Sauce

Sauté the garlic
In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and crushed red pepper flakes, sautéing for about 1 minute until fragrant.

Add the tomatoes
Pour in the crushed tomatoes and stir to combine. Bring to a simmer and cook for about 10 minutes, stirring occasionally.

Season the sauce
Add the chopped basil, salt, and black pepper to the sauce, stirring well. Let it simmer for another 5 minutes.
