Crostini

    Prepare the Baguette

    Preheat the oven to 400°F (200°C). Slice the baguette into 1/2-inch thick slices. Place the slices on a baking sheet.

    Season and Bake

    Brush the baguette slices with olive oil and sprinkle with salt and black pepper. Bake in the preheated oven for 8-10 minutes, or until golden and crispy.

Caramelized Onions

    Slice the Onions

    Thinly slice the yellow onions.

    Cook the Onions

    In a skillet, heat the butter and olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, for about 20-25 minutes, until the onions are caramelized and golden brown.

Gorgonzola Cream Sauce

    Mince the Garlic

    Mince the garlic cloves.

    Heat the Cream

    In a saucepan, combine heavy cream and minced garlic. Cook over medium heat until it begins to simmer.

    Add Gorgonzola

    Stir in the Gorgonzola cheese until melted and smooth. Season with salt and black pepper. Remove from heat and set aside.

Balsamic Reduction

    Prepare the Reduction

    In a small saucepan, bring the balsamic vinegar to a boil over medium heat. Reduce the heat and let it simmer until reduced by half, about 10-15 minutes. It should be thick and syrupy.

Filet Mignon

    Season the Steaks

    Pat the filet mignon steaks dry with paper towels. Season both sides with salt and black pepper.

    Sear the Steaks

    In a skillet over high heat, add olive oil. Once hot, add the steaks and sear for about 3-4 minutes on each side for medium-rare, or until your desired doneness is reached.

Assembly

    Assemble the Crostini

    On each crostini, place a slice of filet mignon, followed by a spoonful of caramelized onions and drizzle with gorgonzola cream sauce. Finish with a drizzle of balsamic reduction.
