Prepare the Eggplant
Slice the eggplants into 1/2 inch thick rounds. Sprinkle with salt and let them sit for 30 minutes to draw out moisture. Rinse and pat dry.

Preheat Oven
Preheat your oven to 375°F (190°C).
Cooking

Sauté Eggplant
In a large skillet, heat olive oil over medium heat. Add the eggplant slices and sauté until golden brown on both sides, about 3-4 minutes per side. Remove from skillet and set aside.

Assemble the Tower
In a 9x13 inch baking dish, spread a thin layer of tomato sauce on the bottom. Layer eggplant slices, followed by a layer of mozzarella cheese, another layer of sauce, and repeat until all ingredients are used, finishing with a layer of mozzarella on top.

Add Seasoning
Sprinkle the top layer of mozzarella with Parmesan cheese, black pepper, Italian seasoning, and chopped fresh basil.

Let the Eggplant Tower cool for 10 minutes before slicing. Serve warm, garnished with additional fresh basil if desired.
