Preheat the Oven
Preheat your oven to 200°C (400°F).

Prepare the Chicken
Pat the chicken halves dry with paper towels. Season them generously with salt and black pepper on all sides.

Cook the Sausage
In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium heat. Add the sweet Italian sausage and cook until browned on all sides, about 5-7 minutes. Remove the sausage from the skillet and set aside.

Sear the Chicken
In the same skillet, add another tablespoon of olive oil. Place the chicken halves skin-side down and sear until golden brown, about 5-6 minutes. Flip the chicken and sear the other side for another 5 minutes.

Combine and Roast
Return the sausage to the skillet and add the halved cherry tomatoes, chicken broth, and chopped thyme. Nestle the chicken halves into the mixture, skin-side up. Bring to a simmer, then transfer the skillet to the preheated oven.

Bake
Roast in the oven for 30-35 minutes, or until the chicken is cooked through and the internal temperature reaches 75°C (165°F).

Plate and Serve
Remove the skillet from the oven and let it rest for a few minutes. Serve the chicken with the vegetables and sauce spooned over the top. Enjoy your Chicken Scarpariello!
