Chicken Marsala

Method

Chicken Marsala

    Prepare the Chicken

    Season the chicken breasts with salt and black pepper. Dredge each piece in all-purpose flour, shaking off any excess.

    Sear the Chicken

    In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken and cook for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

    Cook the Mushrooms

    In the same skillet, add the remaining butter. Once melted, add the sliced mushrooms and cook until they are browned, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

    Deglaze the Skillet

    Pour in the Marsala wine and scrape the bottom of the skillet to release any browned bits. Let it simmer for 2-3 minutes until slightly reduced.

    Add Chicken Broth

    Add the chicken broth to the skillet and return the chicken to the pan. Simmer for about 10-15 minutes until the chicken is cooked through and the sauce has thickened slightly.

    Finish and Serve

    Sprinkle the chopped parsley over the chicken and sauce. Serve the chicken marsala over sautéed spinach.

Sautéed Spinach

    Sauté the Spinach

    In a separate skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.

    Add Fresh Spinach

    Add the fresh spinach to the skillet. Season with salt and black pepper. Stir frequently and cook until the spinach is wilted, about 3-4 minutes.

    Serve

    Remove from heat and serve the sautéed spinach alongside the chicken marsala.
