Chicken Francese

    Prepare the chicken

    Pound the chicken breasts to an even thickness for uniform cooking and season both sides with salt and pepper.

    Dredge the chicken

    Coat each chicken breast in flour, shaking off the excess. Then dip them into the beaten eggs mixed with grated Parmesan cheese.

    Cook the chicken

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Once hot, add the chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.

    Make the sauce

    In the same skillet, add chicken broth, lemon juice, and the remaining 2 tablespoons of butter. Scrape the bottom of the skillet to deglaze, and let the sauce simmer for about 3-5 minutes until slightly thickened.

    Finish the dish

    Return the chicken to the skillet, spooning the sauce over it. Cook for an additional minute to warm through. Garnish with chopped parsley.

    Prepare the spinach

    Wash the fresh spinach thoroughly and set aside to drain.

    Sauté the garlic

    In a separate skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

    Cook the spinach

    Add the spinach to the skillet and sauté for about 3-4 minutes until wilted. Season with salt and black pepper.
