Prepare the chicken
Pound the chicken breasts to an even thickness for uniform cooking and season both sides with salt and pepper.

Dredge the chicken
Coat each chicken breast in flour, shaking off the excess. Then dip them into the beaten eggs mixed with grated Parmesan cheese.

Cook the chicken
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Once hot, add the chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.

Make the sauce
In the same skillet, add chicken broth, lemon juice, and the remaining 2 tablespoons of butter. Scrape the bottom of the skillet to deglaze, and let the sauce simmer for about 3-5 minutes until slightly thickened.

Wash the fresh spinach thoroughly and set aside to drain.
