    Season the bone-in chicken thighs with salt and black pepper on both sides.

    Dice the onion, bell pepper, and carrot. Slice the mushrooms and mince the garlic cloves.

Cooking

    Brown the Chicken

    In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add the seasoned chicken thighs and brown them on both sides, about 5-7 minutes per side. Remove from skillet and set aside.

    In the same skillet, add the diced onion, bell pepper, carrot, and mushrooms. Sauté until the vegetables are softened, about 5 minutes.

    Add the minced garlic, dried oregano, and dried basil to the skillet. Stir for about 1 minute until fragrant.

    Pour in the canned diced tomatoes, chicken broth, and red wine (if using). Stir to combine, then return the browned chicken thighs to the skillet. Ensure the chicken is submerged in the sauce.
