Preparing the Marinara Sauce

Sauté Garlic
Add the minced garlic and sauté for about 1-2 minutes until fragrant.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, red pepper flakes, and sugar. Bring to a simmer.

Simmer Sauce
Reduce heat to low and let the sauce simmer for about 20 minutes, stirring occasionally.
Preparing the Calamari

Prepare the Breading Station
Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of cornstarch, breadcrumbs, salt, black pepper, and garlic powder.

Dredge the Calamari
Take each calamari ring, dip it in the flour first, then the eggs, and finally coat it with the breadcrumb mixture.

Heat Oil for Frying
In a large heavy pot, heat vegetable oil to 350°F (175°C). Use enough oil to submerge the calamari.

Fry the Calamari
Working in batches, fry the calamari for about 2-3 minutes until golden brown and crispy. Do not overcrowd the pot.

Drain and Serve
Remove the fried calamari with a slotted spoon and drain on paper towels. Serve hot with marinara sauce.
