Preparation
Prepare the Broccoli Rabe
Trim the ends of the broccoli rabe and remove any yellow leaves. Rinse thoroughly under cold water and set aside.
Prepare the Garlic
Peel and thinly slice the garlic cloves.
Cooking
Cook the Broccoli Rabe
In a large pot of boiling salted water, add the broccoli rabe and blanch for 2-3 minutes until tender but still bright green. Remove and transfer to an ice bath to stop the cooking process. Drain and set aside.
Sauté the Garlic
In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes. Sauté for about 1-2 minutes until the garlic is fragrant and lightly golden, being careful not to burn it.
Combine Beans and Broccoli Rabe
Add the drained cannellini beans and the blanched broccoli rabe to the skillet. Toss everything together gently to combine. Season with salt and black pepper to taste.
Heat Through
Continue to cook for an additional 3-4 minutes, stirring occasionally, until the beans are heated through and the broccoli rabe is well coated with the garlic oil.
