Braised Short Ribs

Prepare the Ribs
Preheat your oven to 325°F (160°C). Season the short ribs with salt and pepper on all sides.

Sear the Ribs
In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs for about 3-4 minutes on each side or until browned. Remove and set aside.

Deglaze with Wine
Pour in the Barolo wine, scraping the bottom of the pot to loosen any browned bits. Bring to a boil and reduce by half.

Add Broth and Herbs
Return the short ribs to the pot. Pour in the beef broth, add thyme and bay leaves. Bring to a simmer.

Braise
Cover the pot and transfer to the oven. Braise for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
Ricotta Gnocchi

Prepare the Dough
In a mixing bowl, combine ricotta cheese, flour, egg, and salt. Mix until a dough forms. If the dough is too sticky, add more flour as needed.

Shape the Gnocchi
Divide the dough into quarters. Roll each piece into a long rope about ¾ inch thick. Cut into 1-inch pieces. Press each piece with a fork to create ridges.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
Parmesan Cream Sauce

Make the Sauce
In a saucepan, melt butter over medium heat. Add heavy cream and bring to a simmer. Gradually whisk in grated Parmesan cheese until melted and smooth. Season with salt and black pepper.

Combine and Serve
On a plate, place a serving of ricotta gnocchi. Top with braised short ribs, sautéed mushrooms, and peas. Drizzle with Parmesan cream sauce before serving.
