    Prepare the Roast

    Preheat your oven to 450°F (230°C). In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, and chopped fresh rosemary. Rub the prime rib roast with olive oil and then with the spice mixture, ensuring it is evenly coated.

    Roast the Prime Rib

    Place the seasoned prime rib on a rack in a roasting pan. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (165°C) and continue roasting for about 1.5 to 2 hours, or until a meat thermometer inserted into the thickest part reads 130°F (54°C) for medium-rare.

    Rest the Meat

    Once done, remove the prime rib from the oven and cover it loosely with aluminum foil. Let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.

    Make the Au Jus

    While the roast is resting, place the roasting pan on the stovetop over medium heat. Add the beef broth and red wine, scraping up any browned bits from the bottom of the pan. Simmer for about 5-10 minutes until slightly reduced.

    Slice the prime rib and serve it with the warm au jus on the side.
