Roast the Vegetables

Preheat the oven to 400°F (200°C). Cut the tomatoes, bell peppers, and onion into halves and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast in the oven for about 25-30 minutes until softened and slightly charred.

Prepare the Garlic and Walnuts

While the vegetables are roasting, toast the walnuts in a dry skillet over medium heat for about 5 minutes until fragrant. Add the garlic cloves to the skillet for the last 2 minutes to lightly roast them.

Blend the Ingredients

In a food processor, combine the roasted vegetables, toasted walnuts, garlic, lemon juice, chili powder, and fresh parsley. Blend until you reach a smooth but slightly chunky consistency. Adjust seasoning with salt and pepper to taste.

Serve

Transfer the Ezme to a serving bowl and drizzle with a little olive oil on top. Serve with warm naan for dipping.
