Preparing the Adana Skewers

Mix the Meats

In a large bowl, combine the ground beef, ground lamb, grated onion, minced garlic, red pepper flakes, cumin, paprika, salt, black pepper, chopped parsley, and olive oil. Mix well until thoroughly combined.

Shape and Skewer

Divide the mixture into 6 equal portions and mold each portion onto a skewer, pressing firmly to adhere the meat to the skewer.

Chill

Place the skewers in the refrigerator for at least 30 minutes to help them hold their shape while cooking.

Making the Ezme

Combine Ingredients

In a bowl, mix the finely chopped tomatoes, red onion, green pepper, chopped parsley, lemon juice, olive oil, salt, and black pepper. Stir well to combine.

Preparing the Cacik

Mix Cacik Ingredients

In a bowl, combine the yogurt, grated cucumber, minced garlic, olive oil, chopped dill, salt, and black pepper. Mix until smooth and well combined.

Grilling the Skewers

Preheat Grill

Preheat the grill to medium-high heat.

Grill the Skewers

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the meat is cooked through and slightly charred.

Serving

Plate and Serve

Serve the Adana skewers hot with a side of ezme and cacik.
