    Prepare the filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Add pine nuts and cook until golden. Stir in rice and cook for 2-3 minutes, then add parsley, dill, salt, and pepper. Remove from heat and let cool.

    Stuff the grape leaves

    Lay a grape leaf flat, shiny side down. Place a heaping tablespoon of filling near the stem end and fold the sides over the filling, then roll tightly from the stem end to the tip. Repeat with remaining leaves and filling.

    Cook the dolmas

    Place the stuffed grape leaves seam-side down in a large pot. Add enough water to cover the dolmas, along with lemon juice. Place a plate on top to keep them submerged. Cover and simmer on low heat for about 45 minutes.

    Prepare garlic yogurt

    In a bowl, mix together yogurt, minced garlic, and salt to taste. Adjust garlic quantity according to preference.

    Serve

    Once the dolmas are cooked, remove from heat and let them cool slightly. Serve warm or at room temperature with the garlic yogurt on the side.
