Prepare the Potatoes
Wash and peel the potatoes. Cut them into small cubes and boil in salted water for about 10-12 minutes until tender. Drain and set aside.

Cook the Peas
In the same pot, boil the fresh peas for about 3-4 minutes until bright green and tender. Drain and set aside.

Pan Roast the Salmon
Heat olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and black pepper. Place the salmon skin-side down in the skillet. Cook for about 4-5 minutes until the skin is crispy, then flip and cook for an additional 3-4 minutes until the salmon is cooked through.

Prepare the Salad
In a large bowl, combine the boiled potatoes, peas, and chopped baby gem lettuce. Drizzle with lemon juice and toss gently. Season with salt, pepper, and fresh herbs.
