Method

    In a large pot, combine 6 cups water, 1/2 cup kosher salt, 1/4 cup brown sugar, peppercorns, bay leaves, and smashed garlic. Bring to a simmer to dissolve the salt and sugar, then remove from heat and cool to room temperature. Add more cold water or ice to chill if needed.

    Place the drumsticks in a nonreactive container or large zip-top bag. Pour cooled brine over the drumsticks so they are fully submerged. Refrigerate 2 to 4 hours (no more than 6 hours) for best texture. After brining, remove drumsticks, discard brine, and pat the chicken very dry with paper towels.

Prepare Chicken & Rub

    Season base

    If you did not brine, sprinkle 1 1/2 tablespoons kosher salt and 1 teaspoon black pepper evenly over the drumsticks and rub gently so both sides are seasoned. If you brined and rinsed, use only the 1 teaspoon black pepper and omit extra salt or use sparingly.

    Make dry rub

    In a small bowl combine smoked paprika, sweet paprika, 1 tablespoon brown sugar, garlic powder, onion powder, ground cumin, chili powder, dry mustard, 1 teaspoon kosher salt, and 1/2 teaspoon freshly ground black pepper. Mix until evenly blended.

    Apply rub

    Lightly brush each drumstick with about 1 tablespoon olive oil to help the rub adhere. Sprinkle and press the dry rub onto all sides of each drumstick so they are evenly coated. Let rest 15–30 minutes at room temperature while you prepare the smoker/grill (or refrigerate up to 2 hours for stronger flavor).

    Prepare smoker or grill

    Preheat your smoker to a steady 225–250°F (107–121°C). If using a charcoal or gas grill, set up for indirect heat and place soaked wood chips or dry chunks in the smoker box or directly on coals per manufacturer guidance. Aim for consistent low heat and smoke.

    Smoke the drumsticks

    Place drumsticks on the smoker/grill grates over indirect heat, skin side up. Close the lid and smoke for about 1 hour 15 minutes to 1 hour 45 minutes, rotating the pan or flipping once halfway through for even cooking and color. Target internal temperature is 175–185°F (79–85°C) at the thickest part of the meat — this range yields fall-off-the-bone tender dark meat.

    Optional finish at higher heat

    If you prefer crispier skin, in the last 5–10 minutes move the drumsticks to direct heat or increase the smoker/grill temperature to 350°F (177°C) and cook until skin crisps, watching carefully to avoid burning.

    Make finishing sauce

    While the chicken finishes, whisk together 2 tablespoons apple cider vinegar, 1 tablespoon honey, 2 tablespoons apple juice (or water), and 1/2 teaspoon hot sauce if using. Warm briefly in a small saucepan or microwave just until the honey thins.

    Glaze and rest

    Brush the glaze over the drumsticks during the final 5 minutes of cooking, or serve on the side for dipping. Remove the drumsticks from the smoker/grill and tent loosely with foil. Let rest 5–10 minutes to allow juices to redistribute.
