    Trim and bring to room temperature

    If not already trimmed, remove excessive hard fat leaving about 1/4" fat cap on the point side; square the edges for even cooking. Pat the brisket dry with paper towels. Let sit at room temperature for 45–60 minutes before cooking (or refrigerate overnight after seasoning for deeper flavor).

    Prepare rub

    In a small bowl combine kosher salt, cracked black pepper, garlic powder, onion powder and paprika. Stir to blend evenly.

    Apply binder and rub

    Brush the brisket lightly with the neutral oil to act as a binder. Massage the dry rub evenly over all surfaces, pressing so it adheres. Make sure the rub covers edges and the fat-cap side.

    Preheat oven or smoker

    For oven braise: Preheat oven to 275°F (135°C). For smoker: preheat to 225–250°F (107–121°C) with indirect heat and wood of choice (oak or hickory recommended).

    Sear (optional)

    For a deeper crust, heat a large heavy skillet or griddle over high heat with 1 tablespoon neutral oil. Sear the brisket fat-side down then on the lean side for 2–3 minutes each until browned. Transfer to a roasting pan or foil-lined sheet.

Cooking & finishing

    Arrange in pan with liquid

    Place brisket fat-side up in a large roasting pan or Dutch oven. Pour beef stock, apple cider vinegar and Worcestershire around (not over) the brisket so the rub remains intact, creating a moist environment without washing the surface rub.

    Cover and cook low and slow

    Cover the pan tightly with a lid or heavy-duty foil. In the oven: cook at 275°F (135°C) until internal temperature reaches 195–205°F (90–96°C), about 1 to 1.25 hours per pound (for an 8–10 lb brisket plan 8–12 hours). In a smoker: cook fat-side up indirect at 225–250°F until same internal temp, wrapping in foil or butcher paper when the surface hits about 160–170°F (the "stall") if desired to speed finishing.

    Rest

    Once the brisket reaches 195–205°F, remove it to a cutting board, tent loosely with foil and let rest for at least 60–90 minutes (up to 3 hours in an insulated cooler). Resting redistributes juices and allows easier slicing.

    Strain pan juices and finish sauce

    While the brisket rests, pour the pan juices through a fat separator or fine mesh sieve, skim excess fat, then place the strained juices in a small saucepan. Whisk in 2 tablespoons unsalted butter over low heat to enrich, adjust seasoning with salt/pepper to taste. Reduce slightly if you want a thicker sauce.

    Slice and serve

    Trim any overly thick point if you prefer uniform slices. Slice the brisket against the grain in 1/8–1/4" slices for the flat; for the point, you can slice or pull apart. Arrange on a platter, spoon some finishing sauce over the meat, sprinkle with chopped parsley and serve immediately.
