Beef Patties

Optional dipping

Method

Beef Patties

  1. 1

    Mix

Place ground beef in a bowl. Add bread crumbs, Worcestershire sauce, salt, and black pepper. Mix gently with your hands or a fork until combined but not overworked (about 20–30 seconds).

  2. 2

    Portion

Divide the mixture into 4 equal portions (about 4 ounces / 110 g each). Gently shape each portion into a patty about 3–3.5 inches across and roughly 1/2 inch thick. Press a slight dimple in the center of each patty with your thumb to prevent puffing.

  3. 3

    Cook

Heat a large nonstick skillet or griddle over medium-high heat. Add 1 tsp vegetable oil and swirl to coat. Once hot (a drop of water sizzles), place patties in the pan without crowding. Cook 3–4 minutes on the first side until nicely browned. Flip and cook 2–3 minutes more. During the last 30–60 seconds of cooking, place a slice of American cheese on each patty and cover the skillet briefly to melt the cheese. Remove patties to a plate and tent with foil to keep warm.

Buns & Toppings

  1. 4

    Toast buns

Spread a thin layer of softened butter on the cut sides of the buns. Place them butter-side down in a clean skillet over medium heat or on a griddle and toast until golden, 1–2 minutes. Alternatively, toast under a broiler for 30–45 seconds—watch carefully to avoid burning.

  2. 5

    Assemble

Spread 1 tsp ketchup on the bottom half of each bun and 1/2 tsp mayonnaise on the top half. Place a lettuce leaf on the bottom bun, add the cheesy patty, top with two pickle slices, and cap with the top bun. Serve immediately so buns stay warm and patties are juicy.

Fries

  1. 6

    Prep

Preheat oven to 425°F (220°C). Wash and scrub potatoes well. Cut each potato into 1/4–1/2 inch sticks for fries. Pat the cut potatoes very dry with a clean towel or paper towels to remove excess moisture (this helps them crisp).

  2. 7

    Season

Place dried potato sticks in a bowl. Drizzle with 1 tbsp olive oil, then sprinkle paprika, 2 tsp salt, and 1 tsp black pepper. Toss until evenly coated.

  3. 8

    Bake

Arrange fries in a single layer on a rimmed baking sheet lined with parchment or lightly oiled. Bake in the preheated oven for 20 minutes, then flip fries with a spatula and bake an additional 10–15 minutes until golden and crisp at the edges. For extra crispness, increase oven to 450°F (230°C) for the last 5 minutes while watching closely.

  4. 9

    Finish

Remove fries from oven and immediately season with the remaining 1 tsp salt while hot. Serve alongside burgers. If desired, offer extra ketchup or ranch for dipping.

Optional dipping

  1. 10

Place extra ketchup and ranch dressing in small ramekins for dipping. Serve on the side with the fries and provide additional condiments as desired.
