Jerk Marinade

    Prepare aromatics

    Trim and roughly chop the scallions. Peel the garlic. Peel and thinly slice the ginger. Remove stems from thyme if using fresh sprigs; you can include leaves whole.

    Seed the pepper (optional)

    If you prefer less heat, cut the scotch bonnet/habanero in half and remove the seeds and membranes using a spoon or knife. Wear gloves or wash hands thoroughly after handling.

    Make the marinade

    In a blender or food processor combine scallions, garlic, ginger, thyme leaves, allspice, cinnamon, nutmeg, brown sugar, soy sauce, lime juice, vegetable oil, the whole or seeded scotch bonnet, sea salt, and black pepper. Purée until smooth, scraping down sides as needed. The marinade should be thick but pourable; add 1-2 tbsp water if necessary to loosen.

    Taste and adjust

    Taste a small amount (careful — it may be spicy). Adjust salt, sugar, lime, or heat to preference: more lime for brightness, more sugar for balance, more salt for seasoning.

    Prepare the chicken

    Pat the chicken pieces dry with paper towels. Use a sharp knife to make 2–3 shallow slashes through the skin into the meat on each piece — this helps the marinade penetrate.

    Marinate

    Place the chicken in a large bowl or a resealable plastic bag. Pour the jerk marinade over the chicken, ensuring each piece is well coated. Reserve about 1/4 cup of marinade for basting (set aside and do not use later unless you bring it to a boil). Seal or cover and refrigerate for at least 4 hours, ideally overnight (8–12 hours) for best flavor.

    Bring to room temperature

    Remove the chicken from the refrigerator 30–45 minutes before cooking to bring it closer to room temperature for even cooking.

    Preheat grill or oven

    If grilling: preheat grill to medium-high (about 400°F / 200°C) and oil the grates. If oven-roasting: preheat oven to 425°F (220°C) and place a wire rack on a rimmed baking sheet; brush rack with oil.

    Cook the chicken

    Grill method: Place chicken skin-side down and sear 4–6 minutes until nicely charred, then flip and move to indirect heat. Continue cooking with lid closed, turning occasionally and basting with the reserved marinade that you've boiled for 2 minutes, until internal temperature reaches 165°F (74°C) near the bone — about 20–30 minutes total depending on size. Oven method: Arrange chicken skin-side up on the prepared rack and roast for 35–45 minutes, basting once or twice with the reserved boiled marinade, until the internal temperature reaches 165°F (74°C) and skin is caramelized.

    Finish over high heat (optional)

    For extra char, transfer cooked pieces back to a hot grill or increase oven broiler for 2–4 minutes, watching closely to avoid burning. This step gives the characteristic jerk char.

    Rest

    Transfer chicken to a platter and let rest 5–8 minutes so juices redistribute.

Finishing & Serving

    Garnish the chicken with fresh thyme sprigs and serve with lime wedges on the side for squeezing over. Serve with traditional sides like rice and peas, fried plantains, or a simple green salad.
