In a separate bowl whisk 3/4 cup buttermilk, 1 large egg, and 2 tablespoons melted butter until smooth. Stir in 1 tablespoon honey and 1 teaspoon hot sauce to build the sweet-spicy base.

Pour the wet ingredients into the dry ingredients and fold gently with a spatula until just combined. Do not overmix; a few small lumps are fine. The batter should be thick enough to scoop — if it seems too dry, add up to 1–2 tablespoons more buttermilk.

If using optional mix-ins, gently fold in 1/4 cup grated sharp cheddar, 1 tablespoon chopped cilantro, and 1/4 teaspoon black pepper. Adjust salt to taste if needed.

Prepare oil: pour about 3–4 cups neutral oil into a heavy-bottomed pot or Dutch oven to a depth of 2–3 inches. Attach a candy/deep-fry thermometer and heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of batter into the oil; it should sizzle and rise to the surface steadily without browning instantly.

Scoop and shape: using a small cookie scoop (about 1 tablespoon) or two spoons, shape batter into 1-inch to 1 1/4-inch balls. Wet the spoons or dip them in water to prevent sticking. Keep portions uniform for even frying.

Fry in batches: carefully lower 6–8 hushpuppies into the hot oil, avoiding overcrowding. Fry, turning occasionally with a slotted spoon, until golden brown all over, about 2.5–3.5 minutes per batch depending on size. Maintain oil temperature around 325–350°F; if oil gets too hot, reduce heat.

Make sauce: whisk together 1/2 cup sour cream (or Greek yogurt), 1 tablespoon honey, 1 tablespoon fresh lime juice, 1/2 teaspoon lime zest, and 1/8 teaspoon salt until smooth. Taste and adjust honey or lime to preference.
