Prepare
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats. Measure and chop pecans if not already chopped.

Cream butter and sugars
In a large mixing bowl or stand mixer fitted with the paddle attachment, cream 1 cup softened unsalted butter with 1 cup granulated sugar and 1 cup packed light brown sugar on medium speed until light and fluffy, about 2–3 minutes.

Add eggs and vanilla
Beat in 2 large eggs one at a time until incorporated, then add 2 teaspoons vanilla extract and mix until combined.

Combine dry ingredients
In a separate bowl, whisk together 2.5 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, 0.5 teaspoon ground cinnamon, and 0.75 teaspoon salt until evenly distributed.

Incorporate dry into wet
With the mixer on low speed, gradually add the flour mixture to the butter-sugar-egg mixture in two additions, mixing just until combined. Stir in 2 cups rolled oats by hand or on low speed until evenly distributed. If using, stir in 2 tablespoons ground flaxseed now.

Fold in 1 cup semisweet chocolate chips, 1/2 cup butterscotch chips, 1 cup unsweetened shredded coconut, and 1 cup chopped pecans until evenly distributed throughout the dough.

Scoop cookies
Using a medium cookie scoop or a tablespoon (about 2 tablespoons dough each), drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Press a few extra chocolate chips or pecan pieces on top of each dough ball for an attractive finish, if desired.

Bake
Bake in the preheated 350°F (175°C) oven for 10–12 minutes, or until edges are golden brown and centers still look slightly soft. Rotate pans front-to-back halfway through baking for even color.

Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Cookies will firm up as they cool.
