    Trim and bind

    Trim any excessive hard fat from the brisket leaving about 1/8–1/4 inch for flavor. Pat the meat dry with paper towels.

    Apply mustard and rub

    Brush the brisket all over with the mustard to help the dry rub adhere. In a small bowl combine kosher salt, coarse black pepper, garlic powder, onion powder and smoked paprika. Rub the spice mixture evenly over all sides of the brisket, pressing lightly so it sticks.

Cooking (oven or smoker)

    Low-and-slow cook (smoker)

    Preheat your smoker to 225°F (110°C). Place the brisket fat-side up on the smoker grates. Smoke until the internal temperature reaches about 165°F (74°C), roughly 4–6 hours depending on size and consistency of heat. Monitor and replenish wood as needed.

    Alternatively: oven braise

    Preheat oven to 300°F (150°C). In a large Dutch oven, place the brisket fat-side up. Pour beef broth and apple cider vinegar around (not over) the brisket. Cover tightly and roast until internal temperature reaches about 200–205°F (93–96°C), about 3–4 hours for a 4 lb brisket. Check after 2.5 hours; add more broth if too dry.

    Wrap (Texas crutch) if needed

    If the brisket is stalling around 160–170°F and you want to speed through, wrap it tightly in heavy-duty foil or butcher paper with 1/2 cup beef broth before returning to heat. Continue until desired final temp (200–205°F) is achieved.

    Rest

    Remove the brisket when it reaches 200–205°F or when probe-tender. Tent loosely with foil and rest in a cooler or warm oven for 45–60 minutes to redistribute juices.

Chopping & finishing

    Separate and chop

    After resting, transfer the brisket to a cutting board. If it contains distinct point and flat sections, separate them along the grain where natural seam appears. Using a sharp chef's knife, slice across the grain into roughly 1/4–1/2-inch slices, then chop those slices into bite-size pieces — aim for a mix of lean and chopped fatty pieces for best texture.

    Moisten and flavor

    Place chopped brisket into a wide skillet over medium-low heat. Add the butter, worcestershire sauce, brown sugar (if using) and about 1/2 to 1 cup of the reserved beef broth (use less for drier chopped brisket, more for saucier). Gently heat and stir to coat the meat; cook 4–6 minutes until warmed through and juices meld. Taste and add a splash of apple cider vinegar or additional salt/pepper as needed.

    Finish with barbecue sauce (optional)

    If you want saucy chopped brisket, stir in up to 1 cup barbecue sauce and warm until just simmering, about 2 minutes. Do not overcook or the sauce will become overly reduced.

To serve

    Toast buns if using. Pile chopped brisket onto buns or serve on a platter. Offer pickles, sliced onions and coleslaw on the side or directly on the sandwich. Leftover chopped brisket keeps well refrigerated for 3–4 days or freezes for up to 3 months.
