    Prepare jackfruit

    Drain and rinse the canned jackfruit. Cut away the core pieces and any seeds if present. Using your hands or two forks, pull the jackfruit apart into shreds resembling pulled pork. Set aside.

    Sauté aromatics

    Heat 2 tbs olive oil in a large skillet or sauté pan over medium heat. Add the finely chopped onion and cook, stirring occasionally, until translucent and slightly golden, 5–7 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.

    Spice the jackfruit

    Add the shredded jackfruit to the pan and toss with the onion and garlic. Sprinkle smoked paprika, ground cumin, chili powder, crushed red pepper flakes, salt, and black pepper. Stir to coat the jackfruit evenly and cook for 2–3 minutes to bloom the spices.

    Moisten and simmer

    Pour in 120 ml vegetable broth (or water) to deglaze the pan and create steam. Reduce heat to medium-low, cover, and simmer for 10 minutes, stirring occasionally so the jackfruit absorbs moisture and begins to soften and break down.

    Add barbecue sauce and sweetener

    Remove the lid, increase heat to medium, and stir in 1 cup barbecue sauce, 1 tbs apple cider vinegar, and 1 tbs brown sugar. Mix thoroughly and let the sauce come to a gentle simmer. Cook uncovered 6–8 minutes, stirring frequently, until the sauce thickens and clings to the jackfruit. If you want a glossy finish, stir in 1 tsp maple syrup or honey at the end.

    Adjust seasoning

    Taste and adjust salt, pepper, and acidity. If it needs brightness, stir in the optional 1 tsp apple cider vinegar. If too thick, add up to 2–3 tbs more broth; if too thin, simmer a few extra minutes.

    Optional crisping (pan or oven): For texture contrast, spread the sauced jackfruit on a rimmed baking sheet and broil for 3–5 minutes, stirring once, until edges darken slightly. Or heat a nonstick skillet over medium-high and sauté portions for 2–4 minutes to get some charred bits.

    Assemble sandwiches: Lightly toast burger buns. Pile 1/3 to 1/2 cup (more to preference) of BBQ jackfruit onto each bun. Top with coleslaw and pickles if using, and sprinkle with chopped cilantro or parsley for freshness.

    Serve: Serve immediately while warm. Leftover jackfruit keeps in an airtight container in the refrigerator for 3–4 days and reheats gently in a skillet with a splash of water or broth, or in the microwave.
