    Prepare the Rice Noodles

    In a pot of boiling water, add the rice noodles and cook according to package instructions, usually about 3-5 minutes. Drain and set aside.

    Prepare the Vegetables

    Julienne the carrot, cucumber, and red bell pepper. Cut the avocado into thin slices. Set all the vegetables aside.

    Prepare the Herbs

    Rinse the fresh mint and cilantro leaves and pat them dry with a paper towel.

Assembling the Spring Rolls

    Soak the Rice Paper Wrappers

    Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable.

    Place the softened rice paper wrapper on a clean surface. In the lower third of the wrapper, add a small amount of rice noodles, julienned vegetables, avocado slices, fresh mint, cilantro, and shrimp (if using).

    Fold the sides of the wrapper over the filling and then roll it up tightly from the bottom to the top. Repeat with the remaining wrappers and filling.

    In a small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, and water until smooth. Add sesame oil and crushed red pepper flakes for additional flavor.
