Preparation

1

Chop the Vegetables

Peel and chop the carrots, celery, onion, and potatoes into small pieces. Mince the garlic cloves.

2

Prepare the Broth

In a large pot, combine the vegetable broth and water. Bring to a boil over medium-high heat.

Cooking

3

Sauté the Vegetables

In a separate pan, sauté the chopped onions, carrots, and celery in a tablespoon of olive oil over medium heat until they are soft, about 5-7 minutes.

4

Add Garlic and Potatoes

Add the minced garlic and chopped potatoes to the pan. Cook for an additional 2-3 minutes until fragrant.

5

Combine Ingredients

Transfer the sautéed vegetables to the pot with the boiling broth. Stir to combine.

6

Season the Soup

Add salt, black pepper, thyme, and the bay leaf to the pot. Stir well.

7

Simmer

Reduce the heat to low and let the soup simmer for about 20-25 minutes, or until the potatoes are fork-tender.

8

Add Spinach

In the last 5 minutes of cooking, add the spinach to the pot, stirring until wilted.

9

Serve

Remove the bay leaf, ladle the soup into bowls, and serve hot.
