Preparation of Marinade

Make the Marinade

In a medium bowl, combine the olive oil, lemon juice, minced garlic, chopped parsley, salt, black pepper, and cayenne pepper. Mix well until all ingredients are well incorporated.

Marinate the Seafood

Place the shrimp, scallops, and white fish fillets in a large resealable plastic bag or a shallow dish. Pour the marinade over the seafood, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes.

Prepare the Vegetables

While the seafood is marinating, prepare the vegetables. Slice the bell peppers, zucchini, and red onion into thin strips and set aside.

Cook the Seafood and Vegetables

Heat a large skillet or grill pan over medium-high heat. Once hot, add the marinated seafood and cook for about 3-4 minutes on each side, or until the seafood is cooked through and opaque. Remove the seafood from the pan and set aside.

In the same skillet, add the prepared bell peppers, zucchini, and red onion. Sauté for about 5-7 minutes until the vegetables are tender-crisp. Return the cooked seafood to the skillet, toss everything together, and heat through for an additional 2 minutes.
