Prepare the Noodles
Soak the rice noodles in hot water for about 20-30 minutes or until softened. Drain and set aside.

Prep the Vegetables
While the noodles are soaking, julienne the carrot, chop the green onions, and mince the garlic. Set aside.

Prepare the Sauce
In a small bowl, combine fish sauce, tamarind paste, sugar, and Sriracha sauce. Mix well and set aside.

Prepare the Tofu
Cut the firm tofu into cubes and pat dry with a paper towel to remove excess moisture.
Cooking

Cook Tofu
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.

Cook Shrimp
In the same skillet, add a little more oil if needed. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove and set aside with the tofu.

Stir-fry Vegetables
Add a bit more oil to the skillet, then add minced garlic, julienned carrot, and green onions. Stir-fry for about 2-3 minutes until fragrant.

Combine Ingredients
Add the soaked noodles to the skillet along with the cooked shrimp, tofu, bean sprouts, and the sauce. Toss everything together to combine and heat through, about 3-5 minutes.
Serving

Plate the Pad Thai
Serve the Pad Thai hot, garnished with chopped peanuts, lime wedges, and fresh cilantro. Enjoy!
