Jerk Chicken Preparation

    Prepare the Marinade

    In a bowl, mix the jerk seasoning, olive oil, lime juice, minced garlic, grated ginger, and salt. This will create a marinade for the chicken.

    Marinate the Chicken

    Place the chicken thighs in a resealable plastic bag or a bowl. Pour the marinade over the chicken, ensuring it is well-coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours, or overnight for best results.

    Cook the Chicken

    Preheat the grill or oven to medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill or bake the chicken for 20-25 minutes, turning occasionally, until the internal temperature reaches 165°F (75°C).

    Cook the Rice

    In a medium saucepan, combine the brown rice, coconut milk, kidney beans, chopped green onions, thyme, and salt. Bring to a boil over medium heat.

    Reduce heat to low, cover, and simmer for about 40-45 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Vegan Cabbage Preparation

    Prepare the Cabbage and Carrot

    Shred the green cabbage and julienne the carrot.

    Sauté the Cabbage

    In a large skillet, heat the olive oil over medium heat. Add the shredded cabbage and carrot, and sauté for about 5-7 minutes until tender. Drizzle with apple cider vinegar and season with salt to taste. Cook for another 2-3 minutes.
