Filling Preparation

Prepare the Vegetables
In a large mixing bowl, combine the julienned carrot, cucumber, red bell pepper, chopped green onions, chopped cilantro, and shredded lettuce.

Add Flavor
Add soy sauce and lime juice to the vegetable mixture. Toss until all ingredients are well coated.
Wrapping

Soften the Wrappers
Fill a large shallow dish with warm water. Submerge one rice paper wrapper in the water for about 10-15 seconds, or until it becomes pliable.

Fill and Roll
Place the softened wrapper on a clean surface. Spoon about 2 tablespoons of the vegetable filling onto the lower third of the wrapper. Fold the sides in and roll tightly from the bottom up.

Repeat
Continue the process with the remaining wrappers and filling.
Frying

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until hot.

Fry the Spring Rolls
Carefully add the spring rolls to the hot oil in batches. Fry for about 3-4 minutes, turning occasionally, until golden brown and crispy.

Drain
Once cooked, remove the spring rolls with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

In a small bowl, combine peanut butter, soy sauce, honey, and water. Stir until smooth and well mixed.
