Honey Bourbon Chicken

Prepare the Chicken
In a mixing bowl, combine honey, bourbon, soy sauce, minced garlic, ginger, salt, and black pepper to create the marinade. Add the chicken thighs to the marinade, making sure they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Remove chicken from the marinade and place it in the skillet. Cook the chicken for about 5-7 minutes on each side, or until fully cooked and golden brown.

Make the Sauce
Remove the chicken from the skillet and set aside. In the same skillet, add the marinade and bring to a boil. In a small bowl, mix cornstarch and water to create a slurry. Stir this slurry into the boiling marinade and cook until thickened, about 2-3 minutes.

Combine and Serve
Return the chicken to the skillet and coat it with the thickened sauce. Cook for an additional 2 minutes. Serve hot.

Cook the Rice
In a pot, heat olive oil over medium heat. Add the brown rice and toast for 2-3 minutes. Pour in the vegetable broth and add salt. Bring to a boil, then reduce to a low simmer. Cover and cook for about 45 minutes, or until the rice is tender and the liquid is absorbed.

Prepare the Peas
In a small saucepan, add frozen peas with water and a pinch of salt. Cook over medium heat for 5-7 minutes, or until heated through. Season with black pepper before serving.

Sauté the Cabbage
In a large skillet, heat olive oil over medium heat. Add shredded cabbage, salt, and pepper. Sauté for 5-7 minutes, or until the cabbage is tender and slightly caramelized. Stir in apple cider vinegar before serving.
