Preparation of Marinade

    Make the Marinade

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, Dijon mustard, salt, and black pepper until well combined.

Marinating Salmon

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure the fillets are well coated. Cover and refrigerate for at least 30 minutes.

Preparing the Vegetables

    Prepare Seasonal Vegetables

    While the salmon is marinating, wash and prepare the seasonal vegetables. Toss the asparagus, bell peppers, and zucchini in a bowl with olive oil, salt, and black pepper.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F / 190°C).

    Grill the Salmon

    Remove the salmon from the marinade and place it on the grill. Grill for 6-8 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

    Grill the Vegetables

    While the salmon is grilling, place the prepared vegetables on the grill. Grill for about 4-5 minutes, turning occasionally, until they are tender and have nice grill marks.

Serving
