In a shallow dish, combine the all-purpose flour, cornmeal, paprika, and cayenne pepper. In another bowl, whisk together the eggs and milk until well combined.

Take each marinated tilapia fillet and first dredge it in the flour mixture, shaking off any excess. Then dip it into the egg mixture, allowing any excess to drip off, and finally coat it again in the flour mixture to ensure a crispy crust.

In a large skillet, heat the vegetable oil over medium-high heat until shimmering. You can test if the oil is hot enough by dropping a small piece of bread into it; if it sizzles, the oil is ready.
