    In a large bowl, combine the jumbo shrimp, lemon juice, garlic powder, salt, and black pepper. Toss to coat the shrimp evenly. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

    In a shallow dish, mix together the all-purpose flour, cornstarch, paprika, and cayenne pepper. In another shallow dish, whisk the egg and buttermilk together until well combined.

Frying

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Bread the Shrimp

    Remove the marinated shrimp from the refrigerator. Dip each shrimp first into the egg mixture, allowing excess to drip off, then coat it in the flour mixture, shaking off any excess. Place the breaded shrimp on a wire rack or platter.
