Method

Preparation

  1. 1

    Season the Flounder

Sprinkle the flounder fillets with salt and black pepper on both sides. Let them sit for about 15 minutes to absorb the seasoning.

  2. 2

    Prepare the Breading

In a shallow bowl, combine the all-purpose flour and cornmeal. In another bowl, whisk together the eggs and milk until smooth.

Coating

  1. 3

    Coat the Fish

Dip each seasoned flounder fillet first into the flour and cornmeal mixture, ensuring it's well coated. Next, dip it into the egg and milk mixture, and then back into the flour mixture for a double coating.

Frying

  1. 4

    Heat the Oil

In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches about 350°F (180°C).

  2. 5

    Fry the Flounder

Carefully place the coated flounder fillets into the hot oil, cooking them in batches if necessary. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

  3. 6

    Drain and Serve

Once cooked, remove the flounder fillets from the oil and place them on a paper towel-lined plate to drain excess oil. Serve immediately with lemon wedges on the side.
