Prepare the Potatoes
Wash and scrub the russet potatoes thoroughly under running water to remove any dirt. Pat them dry with a kitchen towel.

Cut the Potatoes
Using a sharp knife, cut each potato into thin strips, approximately 1/4 inch thick. Aim for uniformity to ensure even cooking.

Soak the Potatoes
Place the cut potato strips in a large bowl of cold water and let them soak for about 30 minutes. This helps to remove excess starch and achieve crispier fries.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accurate measurement.

Dry the Potatoes
After soaking, drain the potatoes and spread them out on a clean kitchen towel or paper towels. Pat them dry to remove as much moisture as possible.

Carefully add a handful of the dried potato strips to the hot oil, making sure not to overcrowd the pot. Fry in batches for about 4-5 minutes or until golden brown and crispy.
