Preparation

Prepare the Seafood
Rinse the whiting fillets, jumbo shrimp, and crab cake under cold water. Pat dry with paper towels.

Make the Batter
In a large mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Gradually whisk in cold water until the batter is smooth and slightly thick.
Cooking

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

Fry the Whiting
Dip each whiting fillet in the batter, allowing excess to drip off, then carefully place it in the hot oil. Fry for 4–5 minutes or until golden brown and cooked through. Remove and place on a paper towel-lined plate.

Fry the Jumbo Shrimp
Dip each shrimp in the batter and carefully place in the hot oil. Fry for about 3–4 minutes or until they turn pink and are crispy. Remove and place on a paper towel-lined plate.

Fry the Crab Cake
Gently place the crab cake in the hot oil, frying for about 4–5 minutes or until golden brown and heated through. Remove and place on a paper towel-lined plate.
Serving

Prepare the Sides
If serving with sides, fry French fries according to package instructions and prepare coleslaw in advance.

Serve the Dish
Arrange the deep-fried whiting, jumbo shrimp, and crab cake on a platter. Serve immediately with optional French fries and coleslaw on the side.
