Method

Main Dish - Deep-Fried Salmon

    Prepare the Batter

    In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

    Make the Batter

    In a separate bowl, whisk together the eggs and cold water. Gradually add the egg mixture to the dry ingredients, stirring until smooth.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Salmon

    Dip each salmon fillet into the batter, allowing any excess to drip off.

    Fry the Salmon

    Carefully place the battered salmon fillets into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown. Remove and drain on paper towels.

    Boil the Potatoes

    Peel and chop the potatoes into quarters. Place them in a large pot, cover with water, and bring to a boil. Add salt and cook until tender, about 15-20 minutes.

    While the potatoes are boiling, peel and mince the garlic cloves.

    Mash the Potatoes

    Drain the cooked potatoes and return them to the pot. Add the minced garlic, butter, and milk. Mash until creamy and smooth. Season with salt and black pepper to taste.

Side Dish 2 - Steamed Broccoli

    Prepare the Broccoli

    Wash the broccoli florets and trim them into bite-sized pieces.

    Steam the Broccoli

    In a steamer or a pot with a steaming basket, steam the broccoli for about 5-7 minutes until tender but still vibrant green.

    Dress the Broccoli

    Transfer the steamed broccoli to a serving bowl. Drizzle with olive oil, and season with salt and lemon juice to taste.
