Method

Preparation of Shrimp

  1. 1

    Season the Shrimp

In a mixing bowl, combine the shrimp with salt, black pepper, and garlic powder. Toss well to ensure the shrimp are evenly coated with the seasoning.

Breading Process

  1. 2

    Prepare Breading Station

Set up a breading station with three shallow bowls. Place the flour in the first bowl, beaten eggs in the second bowl, and a mixture of shredded coconut and panko breadcrumbs in the third bowl.

  2. 3

    Bread the Shrimp

Take each seasoned shrimp and dredge it first in the flour, shaking off the excess. Then, dip it in the beaten eggs, allowing any excess to drip off. Finally, coat the shrimp in the coconut and panko mixture, pressing gently to ensure it adheres. Repeat this process for all the shrimp.

Frying

  1. 4

    Heat Oil

In a large, heavy-bottomed pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Fry the Shrimp

Carefully add the breaded shrimp to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 2-3 minutes on each side or until golden brown and crispy.

  3. 6

    Drain the Shrimp

Once cooked, remove the shrimp with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Dipping Sauce

  1. 7

    Prepare Dipping Sauce

In a small bowl, combine the sweet chili sauce and fresh lime juice. Stir until well mixed.
