    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

    Form the crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 10 minutes. Remove from oven and let cool while you prepare the filling.

Filling

    Mix the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

    Add the sugar and sour cream

    Add the granulated sugar, sour cream, and vanilla extract to the cream cheese mixture. Continue to mix until well combined.

    Incorporate eggs

    Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl as needed.

    Finish the filling

    Sift in the all-purpose flour and mix until just combined. Be careful not to overmix.

    Pour into crust

    Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.

    Bake the cheesecake

    Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.

    Cool the cheesecake

    Once baked, turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 1 hour. This helps prevent cracking.

    After an hour, remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, preferably overnight.

Topping

    Prepare the topping

    Just before serving, wash and dry the fresh berries. In a small bowl, toss the berries with powdered sugar.

    Serve the cheesecake

    Slice the chilled cheesecake and top each slice with a generous amount of the sweetened berries.
